Gardenia Lace Class

Saturday 18th & Sunday 19th Nov 2017

Time: 9.30am – 5pm

Where: Coolum, Sunshine Coast.

Discover Zoe’s favourite lace techniques for decorating cakes, using various mixed media applications. In this 2-day class, you’ll be covering a variety of skills and techniques. These include wafer paper, piping, cake lace, and dusting. In addition,  you’ll be making a beautiful Gardenia sugar flower as a focal point.

You’ll be working on cake dummies to enable you to concentrate more on the decorative aspects of this design. The top two dummies will be pre-iced for you.

Day 1: Ice bottom tier. Design inspiration, templates and marking out the main elements. Making cake lace, dusting. Begin the sugar gardenia.

Day 2: Finishing the Gardenia. Cake Lace and netting. Applying wafer paper and piping. Lace appliques, sequins.  Assembling the sugar flower on top with sugar leaves.

 


Royal Icing cake classes

Royal Icing Basics

Sunday 3rd December 2017- 9.30am- 5pm.

Discover the amazing art of royal icing, an important skill to have if you are serious about making beautiful cakes. In this one-day workshop, we will be covering the basic skills and techniques to get you started, and giving you the confidence to use it on your cakes and biscuits.

We’ll be starting at the beginning with how to make, store and work with royal icing, including the different consistencies. Then we will be moving on to piping. We’ll cover the basic shape forms, lines, dots, teardops, etc and put them into practice on iced dummy cakes and on cookies. We’ll also touch on a few simple decorative floral elements and borders to go around the base of your cakes.
